Lemon Blueberry Crepes - clean up made easier with Scotch-Brite!

I love making crepes for my kids for breakfast. It is their favorite breakfast and they'll eat them every single day. Today, I mixed it up and made a lemon blueberry crepe. I am usually rushing around the kitchen to get the crepes made and running out the door to get to work with the mess left behind. The dried crepe batter is a bit like cleaning up plaster and I'm left scraping it away from the counter with my fingernails. I found a great product to help with clean up- even the days I leave the dried mess behind. Come check it out and find the crepe recipe later in the post.

I found these new Scotch-Brite® Scrubbing Dish Cloths in the cleaning supplies section at Target. "Non-scratch" is what caught my eye. Most of my cookware requires non-abrasive clean up. For this reason, I don't even buy abrasive sponges or cloths because I don't want the kids to scratch the cookware. I bought two packs of the scrubbing dish cloths (they come in packs of 2 for $4.99)- one mint and one coral. They also come in gray and navy. 
 I don't care for very much clutter by my kitchen sink, so I found this great soap dispenser while at Target. I love that the pump works for both cleaning hands and pumping dish washing liquid for doing the dishes. I wanted to decorate the dispenser for a little more style, so I used a piece of birch tree vinyl I had left over from another project.
I trimmed the vinyl and placed the trees on the plastic dispenser. I love how it turned out. I have aspen trees right out my windows from the kitchen, so it ties in nicely to the surroundings. The other part of the dispenser has a handy holder to put the Scotch-Brite® Scrubbing Dish Cloths after use.
Now to move on to the crepes. I have this recipe memorized and can whip it up in a matter of minutes.
1 egg, 1 egg yolk
1 cup of milk
2/3 cup of flour
1.5 T melted butter
1 t vanilla extract
1 dash of salt
Whisk the ingredients together and warm a pan over medium heat.
This green pan works perfect for crepes. It is shallow with a nicely defined bottom to tilt the pan to spread the batter evenly.
 The edges of the crepe will start to pull from the pan when the crepe is ready to flip.
Here's the mess that typically gets left behind- drips of batter stuck to the counter and whisk. We'll get to that later.
Spread a few dollops of lemon flavored yogurt in the center of the crepe. Place fresh blueberries and roll.
Clean up was a snap using the scrubbing side of the Scotch-Brite® Scrubbing Dish Cloth. No more fingernail scrubbing with the aid of the scrubbing side of the dish cloth!
The advantage of the Scotch-Brite® Dish Scrubbing cloth is the scrubbing side. The other side of the cloth is more like your traditional dish cloth. It is rinse-able, washable (machine and dryer safe) and reusable!
 I like the clean look of my new soap and dish cloth organizer. Much better than having hand soap and dish soap cluttering the counter and the cloths are so pretty!
Top with another dollop of lemon yogurt and garnish with fresh blueberries and a thin lemon slice. If you prefer more lemon flavor, you could add lemon zest to the crepe batter. Tasty breakfast before our bike ride!
