My nieces were here for Memorial Day weekend.  We hiked, played some tennis and created this colorful Pasta Salad Bar for lunch.  As you'll see in the photos, the Pasta Salad Bar was a total hit!  The inspiration for this fun meal came from my 10 year old daughter.  Her latest kick is to cook pasta and top it with Hidden Valley Ranch.

I spotted several new flavors of her beloved Hidden Valley Ranch at King Soopers.  (Find a coupon at this link!)  Roasted Garlic sounded like a no-brainer.  Avovado was the runner-up flavor.  Hidden Valley Ranch dressing can be found in the dressing/condiment aisle near the produce section.
Here are the ingredients we picked out for the Pasta Salad Bar:  tri-colored peppers, black beans, carrots, mozzarella pearls, avocados, goat cheese, bacon, artichoke hearts, heirloom cherry tomatoes, cilantro, lime...
Get slicin' and dicin'...dividing your ingredients in individual bowls.  The assorted colorful bowls made the pasta bar really pop and quickly caught the attention of the kids.  They couldn't wait to dive in and start creating their individual pasta salads.
After layering pasta and spooning their desired toppings in plastic ware and topping with either the new Roasted Garlic or Avocado flavored dressings, they snapped the lids on secure.
Then I told them to shake!
And shake some more!  Clearly this was no fun at. all.
Remove the lids and you have your perfectly coated pasta salad!
The little one was so excited she almost forgot she doesn't eat pasta.  She has to eat gluten-free, so we made a second round minus the pasta
 Shake it girl!  Ha!
We placed her gluten-free ingredients inside of 2 half peppers.  Bonus- the dressing is gluten-free.
The girls gobbling up their pasta.  This was such a HAPPY meal!
My Turn!
I scooped pasta, artichoke hearts, heirloom tomatoes, mozzarella, carrots, peppers, avocado and Roasted Garlic dressing.
