Vegan Pumpkin Chocolate Chip Muffins

After a week of eating fruits and veggies and whole grains and that's about it, I adapted a pumpkin chocolate chip muffin recipe to vegan!  Yes!  I was feeling like I really needed to sink my teeth into something.  I call this a successful recipe because it falls within the guidelines of my restricted food list for a 30 day reset.  I'm working with my body to clear up some allergies.  The first day was the only day I suffered with an ack!-no-M&Ms headache and hunger/cravings.  By day 2, I already felt an increase in energy, minimal cravings and I have been sleeping like a baby.
I adapted a recipe found on the Bob's Red Mill website.  I subbed maple syrup for the brown sugar, whole wheat flour for the GF flour and coconut oil for the vegetable oil.

1 1/2 cup of whole wheat flour (could easily swap with GF flour in original recipe to make it vegan/GF)
3/4 cup organic maple syrup
2 t. baking powder
1/2 t. baking soda
1 1/2 t Ground Cinnamon
1/2 t. Ground Nutmeg
1/4 t. Ground Cloves
1/4 t. Ground Ginger
1/4 t. Pink Himalayan Salt
1/4 c. almond milk
1/4 c. coconut oil
1 cup pumpkin puree
1/2 t. vanilla extract
2/3 c. chocolate chips

Add:  Maple syrup, warmed coconut oil, almond milk & pumpkin to a bowl and mix.  
 Combine:  Sifted flour, salt, baking powder, baking soda & spices. 
 Stir in chocolate chips.  Fill the cupcake liners with the muffin batter all the way to the top of the liner.  Bake at 350F for 20 minutes.
The bottom row of muffins are the vegan pumpkin chocolate chip muffins and the muffins above those are my regular recipe pumpkin chocolate chip muffins for the kids.  They are very close in texture.
The muffins are hearty with the whole wheat flour.  They are really a treat...considering my snacks of figs, dates and soaked almonds.  I don't even like dates.  Check out the Nutrition Facts:

Now I'm motivated to come up with more recipes to get me through this 30 day reset period.  I love to bake and it is a huge challenge to keep the oven turned off knowing that if I bake it, I'll eat it.  After a week, I've dropped 4 lbs and my allergies aren't making my throat itch quite so much.  Next time I make these muffins, I'll make bite sized muffins.
