Turkey Mini Pie

I can be rather particular with pie.  I like apple, peach, pear, rhubarb, lemon meringue, key lime, blueberry, pecan....but I JUST SAY NO to pumpkin pie, cherry pie & mince meat pie.  Yuck.  What a waste of perfectly good pie crust.  Who puts meat in a pie??  (besides my mom).  These little individual turkey pies are easy enough to make a variety of pie flavors and fillings.  We're gonna start with those pretzel chip turkey heads...

 Follow the instructions and add apple filling or pumpkin puree with spice.  The pie in the turkey pie photo is cranberry/peach.
I took the remaining pie dough and hand cut some feathers and then lightly dusted them with cinnamon & sugar.  As you place the dough on the baking sheet, pull the top of the feather and the bottom of the feather to spread the cuts.  Bake until golden.

To assemble the turkey pies, take a round mini pie as the body and then spread the pie crust feathers around, placing the turkey head pretzel chip in the center.  You could also skip the pretzel chip craft and bake the head out of pie dough.  Add some dried apricot feet- using a pair of scissors to shape the legs/feet.
I love pie crust.  I always want more after I finish a slice of pie, so the feathers are a nice flaky treat!  Gobble, gobble these up for Thanksgiving this year!
