Ice Cream Pie

 
Are you ready to sink your teeth into some cold summer treats?  Do you have sensitive teeth?  I do.  I order water with no ice and turn down ice cream as a dessert all the time.  My brothers always asked me to make ice cream pie when we were growing up.  My family had bowls of ice cream with chocolate syrup before bedtime most nights.  As we are starting to experience more warm weather days than spring sleet/snow in recent weeks, summer treats are just around the corner.  I'm sure most people don't cringe at the thought of cold, frozen treats...

With my brother's families around for the Memorial Day Weekend, I knew exactly what I'd made for dessert one night.  I used to make this all the time when we all lived at home together- my brothers would ask "Can you please make an ice cream pie?".

I needed to make two pies for the number of servings (10 adults and 7 kids), so I grabbed goodies to make a grown up ice cream pie and a kid ice cream pie.
Start with a graham cracker (or Oreo cookie) crust.  The grown up pie had a layer of English Toffee Caramel ice cream.  The kids' had a layer of chocolate chip cookie dough ice cream, of course.
 Next came a layer of hot fudge between the layers of ice cream:
 Both pies were topped with a layer of Crushed Vanilla Bean ice cream:
 The kids' pie had gummy bears, mini marshmallows, M&Ms and drizzled Hershey's Chocolate Sauce:
The grown up pie was drizzled with Hershey's Chocolate Sauce and sprinkled with chopped up Skor candy bars:
As you can imagine, the kids went crazy for the ice cream pie...including the big kids- my brothers hadn't had an ice cream pie in many years!
I started the weekend Friday afternoon doing SUP Yoga on the Colorado River.  Saturday morning we hiked.  I went for a trail run while everyone else had a picnic.  Then a water gun fight broke out and we rode over to the bmx track to ride the bumps, played tennis, buzzed my son's head, took a nap, had dinner and roasted marshmallows.  Sunday was more playing outside and more nap time.  Monday was yoga, swimming, bmx track and back home for more nap.  What a fun time!  I think we earned those calories.  How did you spend the long weekend?
