Chocolate Coconut Candies


When I was a kid and our family received a box of chocolates, we would each claim our favorites...which meant fighting over the two milk chocolate covered caramel squares.  We gladly handed over the round chocolate covered coconut candies to my mom and the rest of the box was pretty much a crapshoot, right?  In honor of Mother's Day, I decided to make my mom a box of all chocolate covered coconut candies.  Mom, if you read this before Sunday- surprise!  This heavenly Chocolate Covered Coconut Candy is handmade using only 4 ingredients.
A friend made these a few months ago with 3 ingredients, but I added just a touch of honey to make the filling a bit sweeter.  I chopped up the remainders of a half eaten Godiva Chocolate Bunny to melt.  After melting, place about a teaspoon of the melted chocolate in a mini-cupcake liner.  Combine approximately 2 tablespoons of coconut oil with 1/3 cup of shredded coconut.  Mash the coconut and coconut oil with the back of a spoon to combine.  Squeeze in a little honey for a softer/sweeter filling.

Roll a quarter sized ball of the coconut filling and press into the center of the melted milk chocolate.  Then pour more melted chocolate until the coconut is covered.  Top with shredded coconut garnish.

The chocolates will set up in the refrigerator in approximately 10 minutes and then the candies are ready to enjoy.  I love the smooth melted texture of Godiva chocolate.  The filling is soft and delightful!

I hope this batch lasts all the way until Sunday.  I will have to hide them from my 10 year old son.  Maybe we'll do a dark chocolate version before Sunday and mix them up.
