Meatless Lettuce Wraps
Lettuce wraps are one of my favorite springtime/summer picnic meals and I've found I love replacing the ground turkey with Morningstar Grillers Recipe Crumbles (in the freezer section by the other meatless Boca Burger type products). It appears to be meat, but it has a more mushroom-y texture and picks up the flavor of the other ingredients really well.
Ingredients: Living Lettuce, Morningstar Starter, low sodium soy sauce, chopped garlic, ginger, waterchestnuts, garlic chili sauce, and cilantro (absent from my recipe and fridge this night).Heat the meatless starter in a pan over medium heat. It heats quickly! Add 2-3 Tablespoons of soy sauce. Chop 1-2 inches of fresh ginger, 1 teaspoon of minced garlic, 3/4 small can of waterchestnuts diced. Add to meatless mixture. Add 1/2 teaspoon of garlic chili sauce (more if you want to kick up the spice). Top with fresh chopped cilantro. Serve on living lettuce leaves. Living lettuce is sold with its roots intact- allowing moisture and nutrients to continue supplying nourishment to the plant. It stays fresh longer and the texture of butter lettuce is a little softer/sturdier (perfect for wraps) than the lettuce you may be used to. My kids peel the leaves away and snack on them. I guess the roots make it a novelty and more interesting- whatever it takes to get them to reach for lettuce over licorice! Can't find living lettuce? My second choice is romaine. Total prep time is around 10minutes!
