The boys were asking for brownies and ice cream as I was in the middle of mixing a batch of chocolate cookies. As much as I love the chocolate cookies, I was sure the cookies wouldn't pass as brownies, so my girl grabbed a box mix of brownies and I grabbed the marshmallows.
I added a cup or so of mini marshmallows. If you love chewy brownies, you MUST add marshmallows to the batch.
Trust me.
While it looks like the marshmallows stay fluffy and plump, they actually melt into the brownies while baking. When I pulled the brownies out of the oven, I got the idea to make it Rocky Road. Peanuts. I needed peanuts.
Ahhhh- I grabbed a package of Cracker Jack popcorn at the grocery store earlier in the day for movie night. I sorted the peanuts to turn the marshmallow brownies into a Rocky Road Ice Cream Sundae.
I didn't let the boys see what I was making until I came up behind them and stuck it under their noses...
