Red Velvet Dessert Table

My brother's birthday is two days before Christmas and I feel like he always gets a little over looked this time of year.  He is the first to turn 40 out of 6 of us, so I wanted to make it a special birthday this year and host his party at the private club where I work.  He requested a red velvet cake with cream cheese frosting:
 Did you know Red Velvet Cake falls at altitude?  I'm guessing it is the extra liquid from all of that red food coloring.  I always hear people complaining that they can't make Red Velvet Cake where I live.  The last two parties I have attended where the host served a Red Velvet Cake, the middle of the cake is sunken in and filled in with frosting.  True story.  I use a box mix and it works every time.  No shame.  Stacked and ready for frosting:
 I piped a circle of frosting in the center of the cake and then added a ring of red velvet crumbs.
 The crumbs were messy, but the remaining piping covered all the stray crumbs.
Here is where I second guessed my decision to construct the cake on the flexible plastic to transfer to the clean cake platter.  I didn't exactly get the cake centered on the platter, but I didn't dare pick it up again to readjust.  Family forgives these sorts of lopsided displays.
I was surprised to find Christmas colored candy corn at the market and figured I'd use it for something.  The kids immediately gravitated to the Santas.
